Recipe: Vegan Falafel

Made from garbanzo beans (also called chickpeas) this is a tasty, protein-filled patty with zero cholesterol. It is the  demo dish at VegFest Oahu 2018 by Chef Mama T Gonzales, Executive Chef at Umeke Market. See her bio here.

Vegan Falafel

  • 4 (15 ounce cans) chickpeas
  • 3 Tablespoon olive oil
  • 1 bunch curly kale
  • 1 small red onion
  • Juice of 1 lemon
  • 2 Tablespoons garlic powder
  • 3 Tablespoons chili powder
  • 3 Tablespoons tahini
  • 2 Tablespoons maple syrup
  • 1 teaspoon cumin powder
  • 3 Tablespoons vegan Worcestershire sauce
  • 1 heaping Tablespoons Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350 degrees.
  2. Blend chickpeas and place in large bowl.
  3. Blend kale until completely puréed, and place into bowl.
  4. Blend onion until puréed, and place in bowl.
  5. Place remaining ingredients and mix until well combined.
  6. Oil a baking sheet, and make golfball sized falafels and repeat until all batter used up.
  7. Place in oven for 20 minutes, flip and bake for an additional 10-15 minutes. Remove from oven , let cool and enjoy.

Vegan Tzatziki sauce

  • 1 block firm organic tofu
  • 1 cucumber, peeled.
  • 3 Tablespoons onion
  • 2 garlic cloves
  • Juice of 1 lemon
  • Handful of fresh dill
  • Salt and pepper to taste

Instructions

  • Place all ingredients in a blender and blend until well combined.
